Head to the center of the Desert map where a large oasis sits surrounded by palm trees. There is a mountain on the western side of this oasis area. Walk along the western edge of the map until you reach the point where the mountain meets the oasis, and you will find the first Music Disc Fragment sitting there in the open. As noted in community documentation, this one is visible without much searching once you are standing at the right spot.

The oasis is the most visually distinct landmark in the center of the Desert map. Use it as your anchor point and walk west along the mountain base.
Fragment 2: The pyramid rock formation
Travel to the northeastern region of the Desert map. You are looking for a cluster of large rocks stacked in a pyramid shape. Circle around to the northern side of this formation and you will find a small recess or gap in the rocks. The second Music Disc Fragment is tucked inside that gap. Both sources confirm the entrance is on the northern side, so do not bother approaching from the south.
The fragments can be collected across multiple runs. If you miss one during a session, it will still be waiting in the same spot next time.
Fragment 3: The wooden tower
This one is on the eastern border of the map, toward the mid-southern section. You are looking for a tall wooden tower with a shed at its base. A ladder runs up the side of the tower. Climb it all the way to the top and the third Music Disc Fragment is sitting on top of a barrel. According to the Deltia's Gaming guide, this is the most vertical of the three finds, but the ladder makes it straightforward.

Once you collect all three fragments, the Train Rush track unlocks automatically. To actually listen to it, return to the Saloon hub area and exit the building. The store you want is directly opposite the Weapons Vendor, so it is hard to walk past without noticing it. Head inside, claim the disc, and then use the music disc player to hear the track. Both sources confirm this is where the reward is redeemed.
