After the opening sequence drops you into the world, head straight toward the elevator inside Marrow Keep. Ride it to the top. From there, you'll have access to the first beacon: Widow's Keep (also referred to as Widow's Overlook in the surrounding area).
Step 2: Find the Gloombound Flame at Widow's Overlook
From the Widow's Keep beacon, head down the sloping path that leads into a muddy section filled with gravestones. You'll encounter a miniboss here called the Great Arbiter of Flesh. You don't have to kill him to progress this quest — the item you need is sitting right next to him.
The glowing pickup is the Gloombound Flame. Grab it and leave if you're not ready to fight. If you do decide to take him on, parry or Harden through his telegraphed attacks and stay away from the cliff edge. He'll knock you off if you give him the chance.

Step 3: Return to Marrow Keep and light the brazier
With the Gloombound Flame in your inventory, fast-travel back to Marrow Keep via the beacon. Take the elevator back to the top of the tower. Instead of heading back out into the open world, look along the side of the tower for a candle or brazier. Interact with it and select the option to use the Gloombound Flame.

Step 4: Speak to Thestus
Lighting the brazier summons Thestus, a returning character from the original Mortal Shell. Speak to him and he'll offer you the choice to "Call forth the Night." Confirm it and Night Mode activates immediately.
To turn it off, return to Thestus at the same location and ask him to summon the day instead.

What about the Slayer Seal?
Mortal Shell 2 actually offers two ways to adjust difficulty, and the Slayer Seal goes in the opposite direction from Night Mode.
